Beat Kitchen!
Ever watch a music video and think, "Man, I'm hungry!"? Well, we have! In fact, that's what spawned the idea for Beat Kitchen, our latest segment that features recipes inspired by international and underground music videos! Below are recipes recently featured on Strictly Global from Chef Eugene Abedejos.
Big Darn Fried Potato Leftovers
This recipe is inspired by the song "Mama's Fried Potatoes" by American indie country-blues band, The Reverend Peyton's Big Damn Band. Throughout the song, singer Josh "the Reverend" Peyton chants, "I'd like to thank you all for the food that you made us, but it don't hold a candle to mama's fried potatoes!" We think these deep fried mashed potatoes just might! (But we still love you mama.) So, heat up the deep fryer and let's get started!
Steps:
1) Mix some cheese into the leftover mashed potatoes.
2) Prepare the breading mix:
-Scramble the egg in a bowl.
-Pour some flour in a separate bowl (optional: season with salt/pepper/whatever you like)
-Pour some panko bread crumbs in a separate bowl.
3) Mold the potatoes into whatever shape you like. 'Fishstick', ball, unicorn... whatever you like!
4) Breading process:
-Roll your potato shapes in the flour first, then the egg, and then in the bread crumbs.
-And repeat until all the potato shapes are coated.
5) Deep fry them in a deep fryer for about 1 minute. You're not really cooking them, as the potatoes are cooked already, just trying to get a nice golden brown crust to it.
*If you don't have a deep fryer, you can use a frying pan heavily coated with oil and be sure to flip the shapes so they are nice and golden brown on both sides.
*Healthier option: Instead of frying them, you can put them on a bakers sheet in a 375 degree preheated oven for 20-25 minutes (or until golden brown.)
6) Wait a little bit before eating them, 'cause they'll be hot!
